Veg Pulao is one of the yummiest dishes made up of rice and if often served on a plate in most homes. It is an aromatic blend of rice, vegetables, and spices which are sautéed in ghee. It is a comfort providing food with a delicious taste. How to Cook veg Pulao
Step 1: Take 1/2 cup basmati rice and wash them until you get clear water. Soak the rice in water for 15 to 20 minutes. Drain the water and keep them aside.
Step 2: Get a 2-liter cooker and place it over a medium flame. Put 2 tbsp. ghee and 1 tbsp. oil together in the cooker and heat it on simmer flame.
Step 3: Once you see fumes in ghee and oil, add 1 bay leaf, 2 cloves, 1-inch cinnamon, 1-star anise small, 4 black pepper and 1 black cardamom. Sauté for 20-40 seconds.
Step 4: Now add 1 medium finely chopped onion and sauté on low flame till it turns brown in color. This will take approximately 2-3 minutes. Add 1/2 tbsp. ginger-garlic paste and sauté for a minute.
Step 5: Add vegetables (1 small chopped tomato, 1/4 cup green peas, 1/4 cup chopped carrot, 3 tbsp. chopped french beans) and stir fry them for 2 minutes on low flame.
Step 6: Add soaked basmati rice, 1/4 tsp. garam masala powder, 1/4 Tsp. turmeric powder, 1/2 Tsp. red chili powder and salt to taste. Mix them well. Mix carefully; as the rice is soaked they may break.
Step 7: Add 6-7 drops of lemon juice and stir fry them for 2 minutes and then add 1 cup water.
Step 8: Close the lid of the cooker and turn the flame to medium. On a medium flame, it will take 2 whistles to cook completely. Reduce the flame after the first whistle.
Step 9: As soon the second whistle comes, turn off the flame and wait until the pressure inside cooker turns down itself.
Step 10: After that, open the cooker and fluff the rice with a fork and transfer to serving bowl. Before serving, garnish it with 1 tbsp. chopped coriander leaves.

Tips and Variations:
- Make sure to use the spices quantity accordingly. Extra spice will give a bitter taste to pulao.
- The quantity of water varies on the variety of rice. So, make sure to use accordingly.
- As the rice is soaked, it will require less water.
