Veg noodles are basically an Indo-Chinese cuisine but are loved by everyone, especially kids. It is a quick recipe on which you can rely on busy weeknights. It is a super delicious dish which comes under the main course and takes the only little time to make. You can serve it with Chili mushroom, Veg Manchurian, Chilly Paneer and tastes great. To make this dish, you can choose veggies you love.

How to cook Veg Noddles at Home
Step 1: Heat 2 cup of water in a pan with a salt and few drops of oil.
Step 2: When it comes to boil, add the noodles. You can go through the instruction on noodle pack for the cooking time.
Step 3: Do not overcook them and while they are cooking, shred the veggies.
Step 4: Once they are cooked, strain the water or sieve them.
Step 5: Rinse them in fresh cold water or under the tap.
Step 6: Drain and keep aside to let them cool.
Let’s Start Making Veg Noodles:
Step 1: In a non-stick pan, heat 2 tbsp oil.
Step 2: Add 4 finely chopped garlic cloves and 1-inch finely chopped ginger and stir fry on medium flame.
Step 3: Increase the flame and add 3 medium finely chopped spring onions.
Step 4: Continue stirring it till the onion becomes translucent.
Step 5: Now, add veggies; 8 sliced french beans, 2 small finely chopped or sliced capsicum, 1 large chopped carrot and 1/2 shredded cabbage.
Step 6: Stir fry the veggies on high flame until the veggies are almost cooked while tossing them. Some crunch should remain in veggies.
Step 7: Toss it by using pan’s handle. Make sure to check on heat and temperature of the pan in order to avoid sticking of noodles.
Step 8: Add 2 tbsp. soy sauce, salt to taste, 2 pinches of black pepper. Stir them and add noodles.
Step 9: Keep tossing them to mix veggies well with noodles at least for a minute. Add 1 teaspoon white vinegar and toss again.
Step 10: Check the taste and add salt, soy sauce or pepper if required. Turn the flame off.
Noodles are ready to be served with Manchurian, Chili paneer or any other spicy gravy that you love. Alone itself, they taste great.
- 200 grams noodles
- 2 tbsp oil
- 4 finely chopped garlic cloves (Lehsun)
- 1-inch finely chopped ginger (Adrak)
- 3 medium finely chopped spring onion (Hara Pyaza)
- 8 sliced french beans
- ½ shredded Cabbage (Patta Gobhi)
- 2 small finely chopped or sliced Capsicum (Shimla Mirch)
- 1 large chopped carrot (Gajar)
- 2 tbsp. soy sauce
- salt to taste
- 2 pinch of black pepper powder (kali-mirch powder)
- 1 teaspoon white vinegar
You need to prepare it on a high flame so that it lends some smoky aroma. Make sure to use a heavy bottom pan.
