Veg Biryani Recipe
No matter how diversified Indian society is and how culturally different one appears from another, there are some similarities which can never be denied and are the elements that bind Indian society. Food is one of the key ingredients of Indian culture.
No matter which part of the India your travel, you may find name different for the dish, but have similar ingredients and pattern of making (although tastes uniquely) in each part of India. Ingredients for Veg Biryani
For Rice Marination
- heaped basmati rice (200 grams) 2 cup
- Oil 1 tsp
- Salt 1/2 tsp
- Curd (200 grams) 1 cup or 1 cup thick coconut milk (250 grams)
- Green chilies chopped 2
- Garlic cloves 4 and Ginger 1 inch (to make a paste)
- Sliced onions 1 cup
- Chopped carrots 1/2 cup
- potatoes Chopped 1/2 cup
- Chopped capsicum 1/2 cup
- Green peas 1/2 cup
- Medium tomato 1
- turmeric powder 1/2 tsp
- red chilli powder 1/2 tsp
- garam masala powder 1/2 tsp
- coriander powder 1 tsp
- chopped coriander leaves 3 tbsp
- chopped mint leaves3 tbsp
- salt as required
- 3 tbsp oil or ghee
- cinnamon 1-inch
- cloves 3
- green cardamoms 3
- black cardamom 2
- single strands of mace 2
- Shah jeera 1/2 teaspoon
- black peppers 6
For Tempering and Layering
- chopped coriander leaves 2 tbsp
- chopped mint leaves 2 tbsp
- A fat pinch of saffron
- ginger chopped 1/2 inch
- kewra water or rose water
- 1.5 cups water 2 tsp
Process of cooking biryani
First we will Marinate Rice
Rinse and wash Basmati Rice in a running water for several times to ensure no starch element remains.Once washed, pour rice in a bowl full of water and leave to get socked for about half an hour.
Remove all the water from the bowl after 30 minutes. Make sure there is no water around rice.Add oil and salt to the Rice and blend it well with the hands and keep the Rice on the side.
Prepare Veggie Mixture
It’s time to prepare a veggie mixture for Veg Biryani. Bring out the mixing bowl.Fill the bowl with 1 cup of coconut milk ( if you have curd in place of coconut oil, use card), and add tomato, carrot, capsicum, potatoes, and green peas.
After veggies, add turmeric powder, chili powder, coriander powder, garam masala powder and some salt. Mix it well and keep it for 30 minutes.
Bring out the pressure cooker and heat it on a medium flame. Pour 2tbsp oil in the cooker.
Add cinnamon, green cardamoms, black cardamoms, cloves, black peppers, mace and Shah jeera to the oil and sauté it until they crinkle and become aromatic.
Add sliced onions to the mixture in the cooker, stir it well to mix all the spices with onion and sauté it until onions turn light golden.Once onion turns light golden, off the stove and take out half of sautéed onion in a separate bowl and leave half of it as it is.
Take a spoon and start spreading sautéed onion evenly at the base of the cooker.Now, pour in the veggie mixture we prepared earlier and start spreading evenly on the onion mixture base.
Bring the Rice bowl and pour in the Rice and spread it on the veggie mixture evenly.Now add the half of onion mixture that we kept separate after sautéing the onions.
Now it’s time to add coriander leaves, chopped ginger and mint leaves on the Rice. Sparkle the Rice surface with some saffron.
Use rose water or Kewra water and spray it over the Rice with fingers.All you need now is to add 1.5 cups of water to the layered spices, veggies, and rice.
Cooking the Veg Biryani
Cover the cooker with the lid and remove the whistle.Cook rice for about 20 minutes on a medium to low flame.
That’s it, the most famous Veg Biryani is ready. Let it cool down for 5 to 7 minutes and let the pressure ease.Remove the pressure cooker lid and serve the hot veg Biryani with gravy, curry, raita or simply with curd.

Tips and Variations
1.) While chopping the veggies, make sure not to cut them in thin pieces, but length wise pieces.
2.)Besides spices, you can add dry fruits as well to add a hint of a different flavor.
3.)Make sure to leave Veg Biryani untouched for about 15 mins after cooking. Open the lid only when you are ready to serve.
