Vada Pav, a pure Maharashtrian dish which is loved by each and every individual. It is like a desi burger or like Vada in south India. Blend of unique flavors and spices, this tempting dish can be found easily at any roadside stall in Mumbai and other areas, but what about those folks who don’t reside there? They may miss the heavenly magic of flavors present in vada pav that can take anyone into a different world. A potato patty resting in between pav with different kinds of chutney covering it with some onion topping and fried green chilli is a must to eat once in life. Well, if you cannot go to Mumbai and taste this mouth-watering dish, then with this easy vada pav recipe try making vada pav in the kitchen with simple steps.

Note: The ingredients required to make vada pav are mentioned below; therefore go through the process carefully to understand the making.

Let’s start make vada pav recipe

First we will perpare Green Chutney:

Step 1: In a grinder, take hand-filled coriander, 1/4 cup mint leaves, 3 green chilies, 2-3 garlic cloves, 1/2 Tsp. lime juice and salt to taste.

Step 2: Grind everything well in a blender to prepare a smooth paste. Keep it aside.

Preparing Red Sweet Chutney:

Step 1: Place a pan on a medium flame to boil water. Add 1 cup dates and 1/2 cup tamarind in water and let it boil for 4-5 minutes.Turn off the flame and keep it to cool at room temperature. Once it is cooled down, remove the seeds of tamarind and dates.

Step 2: Transfer the ingredients to the grinder, add 1/2 cup water and make a smooth paste.Place a pan on a low flame and transfer tamarind and dates puree to the pan.

Step 3: Now, add water accordingly to make it little watery. Mix the puree well with water.Add 1/4 Tsp. garam masala powder, 1/2 Tsp. fennel powder, salt to taste and 1/2 cup jaggery powder. Mix it well and keep stirring it.

Step 4: Simmer the flame and let it cook for 3-4 minutes to thicken it.Once it began to thicken, turn off the flame and keep it aside to cool down.

Preparing Red dry chutney:

Step 1: Place pan on a low flame, take 2 tbsp. oil in a pan and add 1 cup garlic cloves to fry them.Add 1/4 cup dried coconut, 1/4 cup roasted groundnut, and 1 tbsp. coriander seeds.

Step 2: Mix and saute it well for 2-4 minutes. Then add salt to taste.Now crush the mixture with a mortar until you find a grainy mixture. Keep it aside.

Preparing the vada’s:

Step 1: Take 5-6 medium sized potatoes, wash them under running water and boil the potatoes. Let them cool and then peel and mash potatoes.

Step 2: Place a pan on a medium flame, put 1 tbsp. oil and heat it. Add 7-8 curry leaves, 1 Tsp. mustard seed, 1 Tsp. cumin seed, 1 Tsp. turmeric powder and a pinch of asafoetida. Then add mashed potatoes to it and mix well.

Step 3: Now, add 1/2 Tsp. garam masala powder, 1 Tsp. coriander powder, 2 tbsp. finely chopped coriander leaves, 3 chopped green chilies, 1/2 inch grated or chopped ginger, salt to taste and 1 Tsp. chat masala to potato and mix them well with it.Fry it for 2-3 minutes on a low flame and keep stirring.

Step 4: Turn off the flame and let it cook. Meanwhile, potatoes are cooling down, prepare a batter.To make the batter, take 2 cups gram flour and mix 1 cup water to it. Stir it well so that no lumps are formed.

Step 5: Add 1/2 Tsp. turmeric powder, 1 Tsp. baking soda, 1/2 Tsp. red chili powder, and salt to taste. Mix all the ingredients well with batter. Make sure to keep it of the thick consistency to coat the potato balls.

Step 6: While the potato mixture is cooling down, prepare the batter by mixing all the ingredients. The batter should be smooth and thick enough to coat the vada.

Step 7: Place a pan on the high flame, let it heat and add oil to fry vada. Once the oil is hot, simmer the flame.Now take a spoonful on your palm and make a medium sized ball.

Step 8: Dip the ball in the prepared batter and coat it nicely from all the sides.Gently, place the vada ball in hot oil to fry.

Step 9: Let it still for 30 seconds and once it turns to light brown, stir fry the vada until the color turns golden brown and it gets crispy from all the sides. Make all the vada like this.

Step 10: Take a pav and slit it from the center. Apply a little amount of green chutney, red sweet chutney and finely chopped onion (optional). Sprinkle some red dried chutney and put the vada in between.In the same pan, slit green chilli and fry them. Sprinkle salt on them and serve them with vada pav.

Step 11: Delicious vada pav is ready to serve as a snack or even as a breakfast on the plate. Serve them with hot cup of masala chai to enjoy them at best.

Ingredients Needed:

For the green chutney:

  • Coriander leaves ½ cup
  • mint leaves ¼th cup
  • 2-3 green chillies
  • 4-5 garlic cloves
  • ½ Tsp. lime juice
  • salt to taste

For the sweet chutney:

  • 1 cup dates (khajoor)
  • 2 tbsp. tamarind (imli)
  • ½ Tsp. red chili powder
  • ½ cup jiggery powder (gur)
  • ½ Tsp. fennel powder (Saunf)
  • 1 Tsp. roasted cumin powder
  • ¼ Tsp. garam masala powder
  • Water as required.
  • Salt to taste.

For the red dry chutney:

  • 1 cup chopped garlic cloves
  • ¼ cup dried coconut
  • ¼ cup roasted groundnut
  • 1 Tbsp. coriander seed
  • 2 tbsp. kashmiri red chili powder
  • 2 tbsp. oil
  • salt as per taste

For the vadas:

  • 3 cups oil to fry and 1 tbsp. oil for tempering
  • 4-5 medium potatoes
  • 8-10 curry leaves
  • 1 Tsp. mustard seed (rai)
  • 1 Tsp. cumin seed (jeera)
  • Pinch of asofoetida (hing)
  • ½ Tsp. turmeric powder
  • ½ cup chopped coriander leaves
  • 3 green chilies chopped finely
  • ½ inch ginger grated (optional)
  • 1 Tsp. chat masala
  • 1 Tsp. coriander seed powder
  • ½ Tsp. garam masala powder
  • Salt to taste

For the batter:

  • 2 cups of sifted gram flour
  • 1 cup water or as required
  • ½ Tsp. turmeric powder (haldi)
  • 1 Tsp. cooking soda
  • ½ Tsp. red chili powder (optional)
  • Salt to taste
  • 8-10 pav
  • 1 chopped onion (optional)
  • 3-4 green chillies
