Ingredients for Uttapam
- Semolina (Rava)- ½ kg
- Buttermilk (Chaanch)- ½ liter
- Capsicum- 1 large
- Onion- 1 large
- Tomato- I large
- Green Chilies- 3 to 4
- Jeera (Cumin Seeds)- 1 teaspoon
- Salt- 1 teaspoon or to taste
- Asafetida (Hing)- 1 pinch
- Ginger- a small piece
Process of cooking Rava Uttapam
Take ½ a kg Semolina (Rava), sieve it and put it in a bowl. Then take ½ liter buttermilk (Chaach) and mix it with the semolina.
Keep the mixture aside for about 2 to 2 ½ hours, covered with a lid.Until the mixture gets soaked completely, you need to get chopped and ready with the vegetables.
Chop one large capsicum, one onion, one tomato, and 3 to 4 green chilies and finely chop a small piece of ginger.Mix them and keep the vegetables aside.
When the mixture of the buttermilk and semolina is completely soaked after 2 ½ hours, add 1 teaspoon jeera, 1/2 teaspoon asafetida (hing), 1 tablespoon of salt (or to taste).
Now put the skillet on medium flame and add a teaspoon of oil to it, wipe of the oil with a cotton cloth with gentle hands. Now spread the batter of 3 inch of height, wither clockwise or anti-clockwise because if you do it otherwise the batter may not spread evenly and ruin it.
After you spread the uttapam, sprinkle some of the vegetable on it.Add one tablespoon of oil around the batter and turn the batter upside down, and you see that side has turned golden brown in color. Add oil again on the side of the uttapam and heat the uttapan until both the sides are completely cooked.
Serve the Rava Uttapam on a plate. It is now ready to be served.
Tips and Variations
- You can add curd finely mixed and sautéed with water to make a thin paste, instead of the buttermilk. In that case you would require one cup of cure or yogurt and one-cup water, and then add it to 500 grams of Rava.
- If you find it difficult to cook with sprinkling the vegetables on top of it, you can mix the whole chopped vegetables into the batter after the batter is completely soaked. This will make the Rava Uttapam easier to be cooked.
