Tomato Rice Recipe
Tomato rice – plain rice cooked with flavorful mixture of tomato, spices, onion, and curry leaves. It is one of the famous south Indian recipes that make us drools over it. It has become a common dish in Indian kitchen at the time and is also known as tomato bath. The best part of these simple rice recipes is they can be prepared in minutes. Ingredients for tomato rice Recipe
- Rice 1½ cup
- Tomatoes 3 medium
- Onion 1 medium
- Ginger garlic paste 1 teaspoon
- Green chilli 1
- A pinch of Asafoetida
- Mustard seeds 1/2 teaspoon
- Curry leaves 7 to 8
- Turmeric powder 1/4 teaspoon
- Red chilli powder 1/2 teaspoon
- Coriander leaves chopped 1/4 cup
- Oil 2 to 3 tablespoon
- Chana Dal ½ tablespoon
- Urad Dal ¼ tablespoon
- Coriander seeds ½ tablespoon
- Salt as needed
Process of how to cook tomato rice
Take 1½ cup rice; rinse it couple of times under running water. While you’re doing other preparation of tomato rice recipe, let them cook on a low to medium flame. Once they are cooked, transfer them in plate to cool.
To prepare dry masala powder for tomato rice, take chana dal, urad dal, and coriander seeds and dry roast them. As chana dal takes much time to roast than others, dry roast it first for 2 to 3 minutes and later add other ingredients of powder. Roast them until the aroma releases and the color of dal turn light brown.
Once the ingredients are roasted properly, transfer them in plate, let them cool. Transfer the ingredients to a small mixer grinder and grind to get a smooth powder.
Take 3 medium tomatoes, 1 medium onion, 1 green chilli, and coriander leaves. Wash them under running water and chop them finely.
Place deep pan on a medium flame, heat the oil. When fumes are visible, add mustard seeds and pinch of asafoetida. When mustard seeds start crackling, add curry leaves, onion, and green chilli.
When the onion turns translucent, add chopped tomatoes and salt as per taste.
Sauté tomatoes until they turn soft and then add ginger-garlic paste, turmeric powder, and red chilli powder. Mix everything well.
Add dry masala powder that you’ve prepared earlier. Mix it well with tomato, stir, and cook for 2 minutes.
Now, add steamed rice and salt. Before adding salt, taste it as you’ve already added it in tomato; add if needed more.
Mix rice and masala well so that grains are covered properly with masala. Stir and cook for 3-4 minutes.
After 2-3 minutes, turn off the flame. South Indian style tomato rice is ready to serve. Serve it with chutney, raita, or with just simple yogurt at lunch or dinner. It will be loved by everyone at dining table.
This recipe was made using pan, if you want to cook tomato rice in cooker then follow these steps
To make tomato rice in pressure cooker, you don’t need to steam rice prior. Just soak them in water for 10 to 15 minutes and keep aside.
Now, take pressure cooker of 3 litre capacity and make tomato mixture as made in above process.
Then add soaked rice in tomato mixture and sauté for a minute. Do it carefully as the rice is soaked and they may break.
Add water and salt. Stir well. Add water carefully; rice is already soaked and extra water will overcook them.
Close the pressure cooker and cook it for 2-3 whistles on a medium flame. After 2 whistles, turn off the flame and let the pressure come down naturally. Open lid and fluff the rice using spoon or fork.
Tips and Variation
- If you don’t have ginger-garlic paste, take 1/2 inch ginger and 5 cloves of garlic in a mortar and crush them until get a smooth paste.
- You can use basmati rice, regular rice, or brown rice.
- For variation, add mint leaves and green peas when you add coriander leaves.
- You can adjust the quantity of red chilli powder as per your taste.
- To avoid sticking of rice grains, precook rice couple of hours before preparing for this recipe.
