Sweet Corn Vada Recipe

Sweet corn, who doesn’t like them? It is one such ingredient that can change the taste of any boring recipe. Corn recipe like sweet corn vada is easy to make. Sweet corn vada is a popular South Indian street food. It is a deep-fried patty, crispy in texture and tastes heavenly when eaten with green chutney or coconut chutney. It is an easy snack recipe and breakfast recipe. Sweet corn vada recipe can be made easily at home with a minimum ingredient such as bread, chana dal, corn, and spices with little preparation. Whether it’s raining or it is a chilled winter, hot vadas served with a hot cup of coffee turns out to be great choice to enjoy the weather. Here is an easy corn vada recipe.

 Ingredient for Sweet Corn Vada 

  • Chana Dal 1/2 cup
  • Sweet corns 1 1/2 cups
  • Mint leaves 2 tablespoon
  • Ginger paste 1 tablespoon
  • Chopped coriander leaves 2 tablespoon
  • Chopped green chili 1 tablespoon
  • Onion 1 small
  • Gram flour 2 tablespoon (optional)
  • Curry leave 8 to 10
  • Salt as required
  • Oil to fry
  • Cinnamon 1 inch
  • Red chili 1
  • Fennel seed (saunf) 3/4 tablespoon
  • Cumin seed 3/4 tablespoon

How to make sweet corn vada

Step 1

Take chana dal, wash it properly, and then allow it to soak for 1 hour 30 minutes.

Step 2

In a blender, take cumin seeds, cinnamon, fennel seeds, and red chili. Blend them together to make slight granular powder.

Step 3

Now, add half soaked chana dal and sweet corn as well in a blending jar with other ingredients and blend to form a coarse mixture.

Step 4

Transfer the mixture into the mixing bowl and add remaining soaked chana dal, curry leaves, mint leaves, coriander leaves, green chilies, ginger paste, and salt. Mix it well using a spoon.

Step 5

Make sure to keep the consistency of mixture thick so that it can bind. If it is too soggy then add gram flour to the mixture to make it thick and mix it really well. No lumps should be there.

Step 6

Take a deep pan, place it on a medium flame, and add oil for deep frying to heat.

Step 7

Take a small portion of the mixture, make a ball using your palms, and flatten them gently. Make 10-12 patties like this until the oil is heating and place them on a greased foil or cloth.

Step 8

When you see fumes in oil, it is ready. To check whether the oil is ready or not, drop a little mixture in it. If it comes up without browning, then the oil is ready to fry the vadas.

Step 9

Pick one vada using your finger from the cloth or paper gently and place it into the hot oil.

Step 10

Let them fry for 2-3 minutes without touching them and once they turn light golden on the bottom side, flip them and fry until they turn golden and crispy. Follow the same for all the patties.

Step 11

Once fried, place them on a kitchen paper to soak excess oil. Serve them hot with green chutney, coconut chutney, or hot chili chutney.

Step 12

To make hot chili chutney, take 10-12 red chilies, remove seeds from them, and soak them in water for 20 minutes.

Step 13

In a blender. take 4 garlic cloves, 1/2 teaspoon sugar, 1/2 teaspoon roasted cumin seeds, 1/2 teaspoon lemon juice, salt as needed and 1 teaspoon water. Add soaked red chilies with other ingredients and blend them together to make a smooth paste.

Serve vadas with chutney or you can also make vada chat. To make vada chat, cut them into pieces, add curd, meethi chutney, black salt, chili powder, garam masala. Garnish it with chopped onions, coriander, sweet corn, and besan sev. And the vada chat is ready to eat.

This was an easy patties recipe which can be made easily at home. Even if in an emergency these corn vada can be made with little variation.

Tips and Variations

  • Don’t forget to add mint leaves and spices used to get the best flavor.
  • Don’t add more than 3 vadas at a time while frying them.
  • For quick corn recipe, instead of using chana dal, you can add bread crumbs into mashed sweet corns and sprinkle the corn flour above the patty before frying. It will give it a crispy texture.
  • To make it healthy, you can fry them in olive oil.
