Ingredients for spiced carrot and lentil soup

  • Cumin seeds 2 tbsp
  • Chilli flakes as per taste
  • Carrots 500 grams
  • Red lentils 140 grams
  • Hot vegetable stock 1 litre
  • Milk 120 ml
  • Salt as needed
  • Pepper as needed
  • Olive oil 1 tbsp

Hot Vegetable Stock : Onions 2 to 3, Carrot 3 to 4, Celery Stalks 4 to 5, Springs 5 to 6, fresh thyme 2, Bay leaf 2, small bunch parsley 2 and whole peppercorns 2 teaspoon.

Prepare Vegetable Stock

Step 1

Chop All The Vegetables in a big pot and Cover it with Water and Simmer.

Cook for One Hour or So and Remove the Vegetables

Strain and Store in a jar

Take 500 grams carrot. Wash them under running water, peel, and grate them.

Step 2

Place saucepan on a medium flame and dry-fry cumin seeds and chili flakes till the aroma releases from them. When the seeds are fried, take half to sprinkle over the soup and leave half in the pan.

Step 3

Now, add carrot, lentils, vegetable stock, salt, ground pepper, and milk. Bring the mixture to boil.

Step 4

Once the soup is boiled, simmer it for 20-25 minutes and then turn off the flame.

Carrot and lentil soup is ready. You can serve it hot or can wait for it to cool down. Garnish it with the remaining cumin seeds and chilli flakes. Serve it with yogurt and plain naan or just a simple garlic bread.

Tips and Variations

  • If you want a smooth texture of the soup, then blend carrot and lentils in a blender.
  • You can blend half and leave some of them for carrot and lentil chunks.
  • There is no doubt how much lentils and carrots are important for our health, but at another hand, many of us really don’t like to eat both.
  • If you want a low-fat alternative for milk then you can use coconut milk.
