Ingredients for Samosa Recipe
For the covering
- All purpose flour- 1 cup
- Desi ghee- 1 tablespoon
- Salt- 1 teapsoon
- Ajjwain- 1 teaspoon
- Water- 1 to 1 ½ cup
For the stuffing
- Potatoes- 4 to 5 medium size
- Green peas- ½ cup
- Oil- 2 tablespoon
- Salt- 1 teaspoon or to taste
- Red Chili Powder- ½ teaspoon
- Garam Masala- ½ teaspoon
- Turmeric Powder- ¼ teaspoon
- Dry Mango Powder (Amchoor)- ½ teaspoon
Process of Making Samosa
Take 4 to 5 potatoes, 1-cup peas, wash them and boil them.After they get boiled, mash the potatoes and keep them aside.
In a small bowl, take a small piece of ginger and garlic. Peel them, cut them into small pieces and the either grind them and make a paste or mash them into a paste, whichever you find easy to do.
Take a non-stick pan and heat oil in it. Add ½ teaspoon cumin seeds. When it starts to crackle, add the ginger and garlic paste to it.
Nicely mix the paste and further add ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, ½ teaspoon garam masala, and ½ teaspoon of dry mango powder and salt (either 1 teaspoon or to taste) into the pan.
Now add the potatoes and peas into the pan and fry the vegetable nicely for about 10 minutes.After the vegetable is fried nicely, take it out and keep it in a bowl.
Now for the samosa covering, we need to take 1 cup of all-purpose flour (Maida).Put the all purpose flour in a bowl, add ½ teaspoon of salt, and ½ teaspoon of ajwain into the maida.
To make the dough soft, we need to add 1 teaspoon of desi ghee into the bowl and rub the flour and mix it well.Now add water slowly, and slowly into the flour to make soft and smooth dough.
Knead the dough very nicely, and keep the dough aside.Now take a small portion of the dough, and make a small ball of the dough just like you make a roti.
Then flatten the ball in the shape of the roti.After the circle is ready, cut the circle from the center in two.You will have two semi circles. Take one of them, and brush water on the circumference of the semi circle.
Make a shape of the cone, by taking one side of the semi circle to the other side.Now get the triangle into your hands and form a cone by pinching the cone of the triangle between your fingers.
Add one tablespoon of the vegetable and fill it inside the cone.Now from the base of triangle seal the edge of the cone.
Take a pan, heat oil into it. When the oil is heated strongly, put one by one the samosa into the pan and deep fry them until they become golden brown in color.
Pour the samosa into the absorbent paper in order to get the excess oil soaked.
Tips and Variations
- It is not necessary to add peas for the stuffing. You can also add finely chopped green chili in the stuffing if you want the samosa to be spicy.
- You can also add dry fruits like finely chopped cashew, raisins into the stuffing to make the samosa richer in taste.
