Pav Bhaji Recipe
Pav Bhaji, a fast food dish from the state of Maharashtra but now isn’t only limited to Mumbai streets only. This spicy blend of veggies is a kid favourite food across India and as well adults love it too. Pav Bhaji is a mixture of vegetables cooked in spices and is served with soft buttered bread. It is definitely Indian food lover’s weakness.

Ingredients for pav bhaji
- Potatoes 2
- green peas 250 grams
- cauliflower 250 grams
- carrot 250 grams
- onion chopped 2
- ginger garlic paste 1 tbsp.
- Tomatoes Chopped 2
- capsicum chopped 250 gram
- red chilli powder 1 tbsp.
- cumin-coriander powder 1 tbsp.
- turmeric powder 1/4 tbsp.
- lemon juice 1 tbsp.
- pav bhaji masala readymade powder 1 tbsp.
- salt to taste
- Oil 2 tbsp.
- Butter 4 tbsp.
- finely chopped coriander 2 tbsp.
- Pav buns 8
Process of making pav bhaji
Gather all the veggies (2 medium potatoes, 250 gms of cauliflower, peas and carrot) and wash them in running water. After chopping, finely chop all the vegetables.
Take a pressure cooker, add 1/2 cup water and add all the finely chopped vegetables into it. Add salt to taste. Close the cooker with lid.
Switch on the medium flame and place the cooker on it. Wait for 3 whistles and then turn off the flame. Let the lid open itself which will take 5-7 minutes.
Take a potato masher and mash all the veggies. If you don’t have a masher, you can do it with a backside of a large spoon or with the help spatula. You can turn it into a smooth paste or let it be with some small chunks.
Heat 2 tbsp. oil and 2 tbsp. butter in a non-stick pan on a medium flame. Add 2 medium chopped onion, 1 tbsp. ginger-garlic paste and sauté it until onion turns translucent.
Then add 2 chopped tomatoes and 250 grams capsicum and salt to a pinch of salt. Continue to sauté until tomatoes and capsicum start turning soft.
Add 1 tbsp red chilli powder, ¼ tbsp. turmeric powder, 1 tbsp cumin-coriander powder and 1 tbsp. readymade pav bhaji powder to the mixture. Stir and mix it well. Close the lid and cook it for 2 minutes.
Add 3/4 cup of water and mix it well. Again, cook the mixture for 2-3 minutes on a medium flame.
Then add mashed vegetables with 1 tbsp. lemon juice. Mix well, cook for 5-7 minutes. Taste the dish at this stage for salt check and add if more is required. Continue stiring it until it has bubbles.
Once you see bubles, turn off the flame and add 2 tbsp. chopped coriander and mix.
Transfer bhaji in a bowl and garnish it with 1 tbsp. butter. Bhaji is ready to be served.
Take pavs and cut them horizontally into two. Heat a pan, put 1 tbsp. butter and place a pav over it.
Shallow fry pav buns both the sides until you see brown spots. Tranfer them to plate and shallow fry remaining ones.
Serve pav bhaji with sliced onions and lemon wedges.
If you want to serve nutrition on your kid’s plate then Pav Bhaji is a great option as the kid hardly notice the veggies used in it and eat it joyfully.
Tips and Variations
- You can add vegetables like beans, sweet corn, brinjal and anything as per your choice and taste.
- If you want a red color then while boiling the veggies, add a small piece of beetroot. This will help you to get a perfect bhaji color. Also, you can use Kashmiri red chilli powder for red color.
- Before serving, you can garnish it with mozzarella cheese for cheese pav bhaji.
- Do not lessen the quantity of butter as the taste of bhaji depends on butter.
