Paneer Bhurji Recipe

In order to make a Paneer Bhurji, we need to use freshly made paneer so that the yield turns out to be soft.Paneer Bhurji is very easy and a quick recipe, it doesn’t take more than 30 minutes perhaps. It is made from crumbling paneer which is put in spicy tomato gravy.

Ingredients for paneer bhurji
- Milk 3 cups (दूध)
- Oil 1 and a half tablespoon (तेल)
- Cumin Seeds 1 teaspoon (जीरा)
- Onion 1 large (chopped) (प्याज)
- Ginger Garlic paste 1 tablespoon (अदरक लहसुन का पेस्ट)
- Green Chillies 1-2 (finely chopped) (मिर्च)
- Turmeric Powder 1/4th teaspoon (हल्दी पाउडर)
- Red Chilly Powder 1 teaspoon (लाल मिर्च पाउडर)
- Cumin Powder half teaspoon (जीरा)
- Coriander Powder 1 teaspoon (धनिया पाउडर)
- Tomato 1 medium (Chopped) (टमाटर)
- fresh Coriander leaves 2 tablespoons (chopped) (धनिये के पत्ते)
- Salt to taste (नमक)
- sour Yogurt 3/4th cup (खट्टा दही)
Process of making paneer burji
Take a non-stick pan and keep on the stove, switch on the stove and let the pan heat for some time.
Then, take 3 cups of milk in a pan and let it boil for some time.
Meanwhile, take another non-stick pan and keep it on the stove to heat it up a bit.
Then, add 1 and a half tbsp of oil, 1 tsp of cumin seeds, one finely chopped onion, 1 tablespoon of ginger garlic paste and 1-2 finely chopped green chillies
Then, we set up the entire mixture we just created for ourselves
After that, we have to add dry Indian spices such as 1/4th tsp turmeric powder, 1 tsp of red chilli powder, ½ tsp of cumin powder, and 1 tsp of coriander powder.
Then, again we have to saute (तलें) the mixture. After that, we add up 1 medium chopped tomatoes, 2 tbsp of fresh coriander leaves and salt of course.
Next, we let the tomato mixture to soft a little bit and hence, we close it with a lid. Then, we take up the milk, which we had kept earlier to boil
In this recipe, we will be using the fresh paneer for our bhurji. For that, we need to split the milk into two halves
Take a spatula, mix the milk once and then add 3/4th cup of sour yogurt into it.As soon as we add the yogurt we see that the milk has been split and this is what we call scrambled paneer.
We take the boiled milk out from the stove and then we separate the scrambled paneer from the milk. For that, we have to take another bowl, keep a strainer on top of it and then keep a muslin cloth over the strainer
Then, bottle up the entire pan into the empty bowl so that the scrambled paneer gets packed up inside the muslin cloth.Then, we use a pair of tongs to squeeze out as much milk as we can from the muslin cloth
Then, we come back to the tomato mixture that we had left earlier and add the hot scrambled paneer into the tomato mixture into pan and then saute (तलें) it till we are satisfied with the results
Our paneer bhurji is ready to be served!
