Masala Kulcha Recipe

Kulcha is a pure North-Indian recipe which is very popular in Punjab and Delhi. It is a tempting and filling supper formula from the general naan and roti. Kulcha is delicate and tasty with fiery masala stuffing. Also matches up awesome with yogurt and pickle.Let’s see how to make a masala kulcha.

Ingredients for Paratha

  1. Maida / All-purpose flour 2 cups
  2. Yeast 1 tsp.
  3. Milk ½ cup
  4. Baking Powder ½ tsp.
  5. Sugar 1 tsp.
  6. Oil or ghee, as required
  7. Yogurt ½ cup

For Masala Stuffing

  1. Potato 2 medium
  2. Paneer shredded ½ cup
  3. Red chilli powder½ tsp.
  4. Coriander powder 1 tsp.
  5. Cumin powder ½ tsp.
  6. Garam masala powder 1 tsp.
  7. Amchur powder ¼ tsp.
  8. Green chilly 1 medium
  9. Coriander leaves chopped 2 tbsp.
  10. Sesame seeds 2 tsp.
  11. Salt to taste

Process of Cooking Masala Kulcha Dough

Step 1

Filter 2 cups maida in a mixing bowl and keep ready. At another side, add ½ tsp. yeast (ख़मीर) to the ½ cup of lukewarm milk and set it aside for at least 1 hour.

Step 2

In a mixing bowl of maida, add a salt to taste, ½ tsp. baking powder and ½ tsp. sugar. Mix it well. You can also filter it 2-3 times to mix it.

Step 3

Now, add ½ cup yogurt, yeast mixture and oil or ghee (as required) to the maida. Take ½ cup water and knead the maida into smooth soft dough.

Step 4

Then set is aside and leave for 2 hours. Make sure to cover it with a damp cloth to avoid dry flaking on it.

Process to Make Stuffing for Masala Kulcha

Step 1

Meanwhile, in that time, prepare the stuffing. To prepare to stuff, boil the 2 medium potatoes. Once they are boiled, peel them and mash them.

Step 2

In a mixing bowl, take mashed potatoes, add ½ cup grated paneer, ½ tsp. red chilli powder, ½ tsp. cumin powder, 1 tsp. coriander powder, ½ tsp. garam masala powder, ¼ tsp. amchur powder and salt to taste. Make sure to add salt accordingly as you’ve added in the dough also.

Step 3

Add 1 finely chopped green chilli and 2 tbsp coriander leaves, and mix it well. Divide the masala into equal sized balls.

Step 4

Now, take dough and make balls out of it. Roll those balls into a small disc, of diameter 4 inches approximately.

Step 5

Then, stuff the masala balls into them and seal the edges. Again, roll the stuffed dough ball to flatten them to thick parathas. You can dust the ball with flour. As required.

Step 6

Sprinkle sesame seeds over paratha and roll it once to make them stick to it.Now, heat a non-stick pan on a medium flame.

Step 7

Grease it with 1 tsp. ghee/oil and put the paratha carefully on the heated pan. Flip the paratha once you notice small brown spots on it.

Step 8

Shallow fry the paratha on both sides by pouring 1 tsp. oil/ghee. And once they turned to golden brown from both the side, remove them from the flame.

Masala Kulcha is ready to be served. Relish it with yogurt, chole, chana masala or any spicy gravy that you love.

Kulcha can be plain or stuff. You can make kulcha with varied fillings. For different taste, stuff it with onion, paneer or pudina.This soft bread is definitely a good option to be served on a plate during parties and if you want to treat your family with something special for dinner, you can make masala kulcha to change the taste with a simple recipe.
