Step 1: First we have to remove all the impurities from Ghee for that Heat 150 Grams of Ghee in a steel bottom pan and cool it by adding ice, we will get pure ghee on the surface of the pan.
Step 2: Stir the ghee nicely till it is smooth and start absorb the flour and water slowly till you get batter.
Step 3: Heat ghee in a steel bottom pan , start pouring the batter in center, fry till it is golden brown.
Step 4: Now we have to make sugar syrup by heating 250 ml water and 500 grams sugar till the sugar dissolves completely.Now add the fried Ghevar to the warm syrup and remove.
Step 5: Now we will make malai heat 1 lit milk, 50 grams sugar ,5 grams cardamom powder and 1 gram saffron and reduce to half,cool till it thickens
Step 6: Top the malai on the ghevar and garnish with chopped nuts(Ghevar is easily available in market)
Ingredients Of Malai Ghevar
- 500 gms maida
- 150 gms ghee
- 1.5 liter water
- 1 liter milk
- 50 gms sugar
- 5 gms cardamom powder
- 1 gm saffron
- 50 gms dry fruit (chopped)
For Sugar Syrup:
- 500 gms sugar
- 250 ml water
