There is no perfect breakfast for a South Indian other than idly, chutney, and sambar. It is a delicacy for the people of rest of India as well. It is also a nutritious diet that contains proteins, vitamins, and other important nutrients. People suffering from diabetics and intestinal problems can also consume it. Moreover, it doesn’t put weight on you, so it is ideal for the people on dieting. Here is how you can make fluffy and tasty idly at your home.


Soaking time: 4 hours
Fermenting time: 9 hours
Steaming time: 12 minutes
Serves: 4 to 5 people


Note:  Ingredients for Idly are mentioned below. You should go through them before initiating the process of making idly. There are mainly three procedures for making idly. They are soaking raw items, fermenting and cooking. You will find all of the methods in details here.

Step by step process of preparing raw items for idly

Here you have to make two separate batter

Rice Batter: It starts with preparing the raw items for the idly. Rinse the 1 cup parboiled rice, 1 cup regular rice, and quarter cup poha (flat rice). Let them soak in a single bowl for at least 4-5 hours.

Urad Dal Batter:  You have to wash half cup urad dal and quarter teaspoon methi seeds many times and let them soak in the water for 5 to 6 hours separately.

Step by step process of making the Idly batter.

Step 1: Take out the water from the soaked urad dal.

Step 2: Add Soaked Urad Dal in grinding jar or utensil, next add one pinch salt and water. You can also add 1/4 tablespoon soaked methi seeds to the jar. You have to grind them to make a paste. The paste should be frothy and smooth. While grinding, you have to scrape off the sides of the jar periodically. Move the paste to a large utensil.

Step 3: Now, you have to grind the soaked parboiled rice, regular rice and poha (flat rice).Make it a smooth batter and move in a large utensil.

Step 4: Afterwards, mix the rice batter with urad dal batter in a large utensil. Add a pinch of salt if needed.

Step 5: Cover the mixture of both of the batter and let it ferment for at least 9 hours. You can add baking soda to make this process better. You can assess the fermentation process if the batter rises and double in the size.

Tip: It’s better to soak batter last night

Step by step process of steaming Idly

Step 1: Oil the idly cups in the Idly stand.

Step 2: Now, pour the fermented idly batter in the cups of idly stands and put it in the steamer or idli stands for steaming. In the pressure cooker, you must remove the whistle or the vent weight.

Step 3: Steam it for around 12 minutes on medium flame.

Step 4: Afterwards, use spoons for taking out the idly from the moulds.

Step 5: Your idly is ready, Finally, serve it with Sambhar and Coconut chutney. You can use coriander leaves for garnishing.

What you need to make Idli
Ingredients :

  • 1 cup parboiled rice and 1 cup regular rice
  • Half cup Urad dal
  • Quarter cup poha (flat rice)
  • Quarter teaspoon methi seeds
  • Water for soaking raw items, grinding and steaming
  • Salt as per taste
  • Oil for applying on the cups of idly stand



  • You can store the batter in the refrigerator and use it for preparing idly for a couple of days.
  • The rice varieties like Parmal rice or Basmati rice makes the best batter.
