Eggless Donut Recipe

Who doesn’t love donuts? Donut is one such dessert which is loved by everyone, from kids to teenagers to adults to an older person. It is basically a cuisine of the America but now is famous all over the world for its taste. But, many people avoid eating a donut as they think it can’t be made without eggs and secondly getting a delicious donut anywhere is difficult. They are made with rich sweet dough that gets its taste after the addition of milk and sugar to the dough. The glazing can be done by any flavour, the choice is yours. Here is an eggless donut recipe which can be easily made at home even without a donut maker

Ingredients for donut dough

  • Whole wheat flour 2 cups
  • Instant yeast 1/2 teaspoon
  • Sugar 1/4 cup
  • Milk 3/4 cup
  • Butter 2 to 3 tablespoon
  • Nutmeg powder 1 pinch
  • Vanilla extract 1 teaspoon

For glazing

  • Cocoa powder 2 tablespoon
  • Icing sugar or powdered sugar 3 tablespoon
  • Milk as needed
  • Vanilla essence 1/4 teaspoon

For cinnamon sprinkle

  • Cinnamon powder 1/2 teaspoon
  • Powdered sugar 2 tablespoon
  • Melted butter 2 tablespoon

How to make eggless donut

To prepare dough

Step 1

Take 1/4 cup milk, make it warm, and transfer it to a mixing bowl. Make sure the milk is warm and not hot.

Step 2

Add 1/2 teaspoon yeast and 1/4 cup sugar in a bowl and mix it really well.

Step 3

Now, take 1 cup whole wheat flour and add it to milk. Mix it well using a spoon. Make sure that no lumps should be formed in the mixture.

Step 4

Once the flour is mixed well, cover the bowl with the lid or with a kitchen towel. Keep it aside for 20 to 30 minutes. After 30 minutes, you will notice that the mixture has air pockets in it and has become stringy.

Step 5

Now, add the remaining whole wheat flour, butter, vanilla extract, and nutmeg powder to the dough mixture. Mix the ingredients first and then start kneading the dough. If required then add 1/4 cup milk. Do not add milk at once, add as required, and make sure it should be at room temperature.

Step 6

Knead the dough till it turns soft, supple, and smooth. The donut dough will be softer than chapati dough. If it is hard then add milk and knead until it turns soft. At first, while adding milk, it will feel that the dough turned sticky but as you knead continuously the milk will be absorbed and it will turn soft.

Step 7

Once the dough is ready, cover the bowl and leave it for 50 to 60 minutes. After an hour when you will check, the quantity of dough will get doubled. One thing you have to make sure that the dough is soft else the texture of donuts will be rough.

Step 8

While the donut dough is kept aside for fermentation, prepare for the glaze.

To make the chocolate glaze

  • In a mixing bowl, take icing sugar, cocoa powder, vanilla essence, and milk. The quantity of milk will not be more than 5 tablespoons. Add milk slowly as the consistency of the glaze shouldn’t be very thick and nor runny.
  • Mix all the ingredients very well. No lumps should be formed in it. If the glaze is thick then add little milk and mix it well.

For cinnamon sprinkle

  • In a bowl, take powdered sugar or icing sugar and cinnamon powder. Mix them well and keep it aside.

To make donut

Step 1

In a baking tray, line a butter paper or parchment paper. You can also grease a tray with butter.

Step 2

Take donut dough and before making donuts, knead it gently. On a kitchen slab, sprinkle some flour and then roll the entire dough. Cut circles of width not more than 1/2 to 3/4 inch.

Step 3

Now, take one portion and press it with donut cutter. Repeat this with all the dough portions. If you don’t have donut cutter than take one small and one big lid. Press the dough with big lid and remove the excess outer dough and then take small lid and press to cut it in the center. Remove the center piece and you will get donut shape. Do this gently with all the dough portions.

Step 4

Align the dough in the tray. Keep the center pieces, gather them, knead, and roll the dough. Again cut them into a small portion, and repeat the process.

Step 5

While doing this, preheat oven to 180 degree Celsius. This will help to bake dough easily. It will take 15 to 20 minutes to bake but the time may vary depending on the size, brand, and other features. Once the oven is ready, bake until the top turns golden. Do not overbake else they may turn dry.

Step 6

Take out the donuts from the oven. If some are baked and some are not then removing the baked ones and re-bake the other ones. Keep the baked donuts on a wired rack and start glazing. Once all the donuts are properly baked, repeat the glazing process for them too. You don’t need to wait for them to cool down.

To glaze donuts

Step 1

For cinnamon glaze, melt butter in a bowl on a low flame. Keep donuts upside down in the butter and then place them in cinnamon sugar mixture prepared earlier from the buttered side. Gently move the donuts in the cinnamon sugar mixture so that it gets to stick to the donut. Once done, keep the donuts on the wired rack.

Step 2

For chocolate glaze, keep the donut upside down in the glaze and move gently. Once done, remove it from the glaze and keep it on the wired rack. Also, you can sprinkle some confetti or desiccated coconut over it for some added flavors.

You can serve donuts hot or warm or at a room temperature. If they are left then you can refrigerate them and can be eaten later. But as they refrigerate, they turn dense. So before serving, we recommend you to warm them in an oven or microwave, or keep them at a room temperature for 30 to 40 minutes.

The glazing of donut can be of any flavor. Glazed donuts look beautiful as well as they taste delicious. It was an easy eggless donut recipe at home and with this recipe, you don’t have to think about how to make donuts without eggs.

Tips and variation

Instead of instant yeast, you can use dry yeast or fresh yeast. In case of dry and fresh yeast, you have to leave the dough for 2 to 3 hours, and the quantity f the yeast will vary too. If using dry yeast then take 3/4 teaspoon and if you are using fresh yeast then take 1.5 teaspoons.

You can use icing sugar or powdered sugar or fine sugar too for glazing.
