Dum aloo is one of the most famous recipes, especially in North India. However, there are various versions that have followed up in the making of Dum Aloo. The most famous and popular ones are the Kashmiri Dum Aloo or the Restaurant Style Dum Aloo. You might be thinking of the difference between the two and why are these two different. Ingredients for Dum Aloo
- Potatoes: 8 mediums sized
- Tomatoes: 2
- Onion: 2
- Garlic: ½ clove
- Red chili powder: 2 teaspoons
- Coriander powder: 2 teaspoons
- Turmeric powder: 1 teaspoon
- Food color: 1 teaspoon
- Garam masala: 1 teaspoon
- Whole masala: small amount
- Desi ghee: 1 tablespoon
- Refined oil: 4 tablespoons
- Coriander leaves: for garnishing.
Process of cooking Dum Aloo
In a bowl take small potatoes. Wash them and keep them into the pressure cooker by adding a glass of water into it. Now let the whistle blow four to five times.
Wait until the cooker reaches the room temperature. Then open the lid of the cooker and put the potatoes in a bowl.
Peel the potatoes, if you do not get baby potatoes you can either make small balls of potatoes using dum aloo peeler or cut potatoes into four or two pieces, depending on the size of the potatoes.
Prick the potatoes using a fork. Now sprinkle two teaspoons of red chili powder and two teaspoons of salt (or to taste) on the potatoes. Mix them by shaking the bowl.
Now heat oil in a pan. Add ample amount of oil, since we will be deep frying the potatoes.
After the oil is heated, add potatoes into the oil and let it deep fry.Until then one can prepare the materials for gravy.
Take two tomatoes and cut them into small pieces. And add them separately into the mixer grinder.Then take 2 medium size onions and cut them into small pieces too. Add finely chopped half clove of garlic and ginger, add them into another mixer grinder.
Also, keep on looking at the potatoes left for deep frying. When they are fried and turns golden brown in color take them out of the pan on an absorbent paper.
Now again heat one tablespoon of oil in a pan. After that add whole garam masala (khada masal, consisting of dal cheeni, jaifal, elaichi, and long). You have to be careful while you are adding them, you need to cut them minutely.
Then add the onion into the pan and fry until it turns golden brown in color.After the onion turns golden brown in color, then add the tomato puree in the pan and along with it add ½ teaspoon red chili powder, two teaspoons of coriander powder,one teaspoons of turmeric powder and salt according to taste.
Now saute until the tomato gravy until it leaves oil behind. This will ensure the tomato puree to be cooked properly.
After this, add a glass of water into the gravy, and let that boil for a little time. Then pour the potatoes into the pan and let the gravy boil again, with the potatoes this time.Add a little amount of red food color in the mixture.
After the dum aloo is cooked properly, close the flame.
Heat desi ghee in a tadka pan and add one teaspoon of jeera and one teaspoon of garam masala into it.Then add this tadka into the dum aloo and cover it with a lid or plate.
Now when serving add finely chopped coriander leaves into the mixture to garnish.Dum Aloo is ready to be served.
Tips and Variations
- You can also add cashew nuts and different dry fruits to make the vegetable richer in looks and taste.
- Add milk instead of water. This will make the gravy thick and add different taste to the recipe over all.
- Carefully add the red chili powder and salt as you have already added them while deep frying the potatoes.
