Baby Corn Masala Recipe

Ingredients for baby corn masala
- Baby Corn 250 grams
- bay leaf 1 (tej pata)which is medium –sized
- red chili powder ¼ teaspoon
- Dhania powder 1 teaspoon
- garam masala powder ½ teaspoon
- haldi ¼ teaspoon
- Kasuri methi crushed ½ teaspoon
- Water 2 cups
- Oil 2 ½ tablespoon
- Salt as needed
- Jeera seeds
Process of making Baby Corn Masala
First, put 3 tomatoes in a bowl full of boiling water and cover it for 15 minutes. After 15 minutes, drain the boiling water, unwrap tomatoes and make a puree. 1 cup of tomato puree is enough for the recipe.
Next, slice the Baby corn into small round pieces which will be incorporated with the curry.
Then is the turn to paste some ingredients in a grinder. These ingredients are 1 medium-sized onion, 4 garlic, ¾ inch ginger, 2 green chilies.
Immerse cashew nuts in hot water for 10 minutes and then make a smooth paste of it.
To bring chatpata flavor in Baby Corn Curry, you may add few more masala like 1 Elaichi,1-inch dalchini, 2 cloves, 2 tablespoon melon seeds, to it. So you may grind this masala in a blender.
Now we will start Cooking Process
You may cook the dish either in a pan or pressure cooker
First, heat oil in a pan or in a pressure cooker. Then give jeera seeds and medium- sized bay leaf to the heated oil.
When it sizzles, add onion paste to it and stir it well until it turns slightly brown.
Whenever raw smell of onion disappears, add ginger-garlic-green chili paste to it. Cook it for few minutes.
Give tomato puree, spice powder like red chili powder, haldi, dhania powder and garam masala into the pan. Add salt as needed. Mix the masala till oil oozes out. The colour of mixture will also change. It will take almost 20 minutes to cook.
Then add cashew nuts paste, baby corn pieces and 2 cups of water. Keep it for 10 minutes on a low flame till the baby corn is cooked and you get a thick gravy.
To enhance the taste, add pasted masala (elaichi,dalchini, melon seeds, cloves), Kasuri methi, garam masala to it.
When cooking is almost complete, check the taste of the dish and add more salt if needed. Switch off the gas and Baby Corn Curry is ready.Serve the hot Baby corn curry garnished with coriander leaves and round-sliced onions and eat it with naan, roti, parathas, pulao, jeera rice etc.
- If you cook it in a pressure cooker, it will take less time.
- You may add more water to it if you want thin curry.
- If you want healthier curry, you can avoid adding pasted masala to it.
